Just like the Jack Johnson song, everyone loves banana pancakes! What if I told you that it was incredibly easy to make these simple and sweet treats?
There are easy recipes and then there are very easy recipes. This one falls into the latter category. There are essentially only two ingredients!
Not only are they simple, but they are also really sweet – without the addition of any sugar or sweetner! Yum!
I added cinnamon to the batter, which makes them even better.
These two ingredients will get you a lot of grain-free and delicious pancakes. However they can be quite thin in consistency, so I added a teaspoon of quinoa flour and half a teaspoon of baking powder to make them ‘fluffier.’
Whichever way you choose to make them, they will wow you with their simplicity and sweetness!

Ingredients:
1 ripe banana
1 ripe egg
Optional:
Add cinnamon
Add an extra egg to make extra batter, but it will be thinner
A teaspoon of wheat-free flour
A half a teaspoon of baking powder
Instructions:
Mash up the banana.
Mix it with the egg and any other optional ingredients until they form a batter.
Spray a pan with cooking spray and heat pan on stove until very hot.
Turn the heat down low and pour spoonfuls of batter into pan.
Allow them to cook for 30 seconds to a minute before flipping them (it is a bit tricky to find the balance between burning and flipping too early, so experiement till you get it right).
Put on a plate, sprinkle liberally with cinnamon and Vanilla Canderel, and eat!
